Salpicão is one of the noblest sausages in the Trás-os-Montes tradition. Made with the finest pork from Bísaro pigs, raised extensively and with a selected diet, it offers high-quality meat with an unmistakable aroma and flavour marbling.
It should be served raw, in thin slices, as an appetizer or accompanied by good bread, cheese, and local wine. It can also be used in the traditional "cozido à portuguesa" stew.
