The Bísaro pig is one of the Portuguese autochthonous pig breeds with the oldest history. Hardy, slow-growing, and reared outdoors, it yields meat with marbled texture and intramuscular fat that distinguishes the traditional smoked meats of Trás-os-Montes.
Raising Bísaro pigs today is an act of conservation: of a breed, of a territory, and of a method.
Slow Food Grand Prix
Award at the 26th edition of Monte-Carlo Gastronomie. In the same year, Bísaro products were served at the royal wedding in Portugal.
