Our secreto cuts come from free-range pigs, fed naturally and supplemented with chestnuts from Trás-os-Montes, which gives them the characteristic aroma and marbling of the Bísaro breed.
Grill the Bísaro pork secreto cuts over high heat, with just a pinch of coarse salt. The fat in the cut itself will take care of the rest.
