About Us
Ninety years later, it remains in the same village, at the entrance of the Montesinho Natural Park, but today it controls the entire journey of flavour: it raises its own Bísaro pigs free-range, processes, cures, slices, and delivers throughout the country.
The current company was established in 1998, specialising in hams, cured sausages, and Bísaro pork. The raw material comes from its own breeding within the Park, fed with chestnuts and cereals from the region. The smoking is slow, and the curing respects the climate of Terra Fria. There are no shortcuts, there is
method.
Quality is not just a word, it's a system: ISO 9001:2015 certification, and annual audit according to the international IFS Food standard. Products with the PGI and PDO seals are controlled by independent certification bodies.
Bísaro is part of the A. Montesinho group, which includes the typical D. Roberto restaurant, the Bísaro Museum, and rural tourism in the region. From farm to cure, from cure to table, from table to territory.

Our Story
90 Years of History
Nine decades after the Gimonde grocery store, Bísaro invests in solar energy for self-consumption (PRR) and maintains its IFS Food certification with annual audits.

Gimonde's grocery store
He opens the family's first shop and grocery store in Gimonde. This is where it all begins.
The Bísaro Pig
The Bísaro pig is one of the Portuguese indigenous pig breeds with the oldest history. Long-legged, with a long snout and large, droopy ears, it has remained almost in its primitive state in the highlands of Trás-os-Montes.
It's not an intensively farmed pig. It's a rustic animal, slow-growing, raised outdoors. That's what gives the meat its flavour, marbled texture, and intermuscular fat that distinguish Trás-os-Montes smoked products.
Origin and history
Pig farming in the Northeast of Trás-os-Montes has been documented since pre-Christian times, as evidenced by the "berrões" (boars), granite sculptures in the shape of pigs, and the pig tributes mentioned in the Charters of the region's municipalities. For centuries, the Bísaro pig was the pillar of the family economy
of these mountains.
Creation and feeding
Traditional extensive farming: animals live outdoors and are only stabled in harsh winters. They eat cereals (wheat, corn, rye, oats), vegetables and fruit; in October and November, they go to the chestnut groves to eat fallen chestnuts. At Bísaro, this rearing method is practised in-house, within the Montesinho Natural Park.
DOP and IGP Certification
Carne de Bísaro Transmontano PDO: Bísaro breed animals traditionally raised in Bragança and Vila Real. And the products: Presunto Bísaro de Vinhais PGI, Alheira de Vinhais PGI, Salpicão de Vinhais PGI, Chouriça de Carne de Vinhais PGI and Butelo de Vinhais PGI. European labels that guarantee origin, breed, and method.
Breed conservation
The Bísaro almost disappeared in the 20th century with the advance of industrial breeds. Its recovery is due to breeders and ANCSUB (1994), which instituted the Zoological Registry in 1995 and manages the Herd Book. Raising Bísaro today is an act of conservation: of a breed, a territory, and a method.

There are 9 houses in three locations – 3 in the village of Gimonde, 2 at Quinta das Covas and 4 at Montesinho Eco-Resort, in addition to the campsite
