Secreto is the hidden cut of pork, located between the shoulder and the belly. In the Bísaro pig, with its marbled fat, these are thin layers of meat and fat that melt on the grill. It's the most rewarding cut for those starting out with grilling: difficult to dry out, quick to cook.
This is one of those recipes where the quality of the meat makes the dish. The rest is fire, sea salt flakes, and the patience to let it rest before cutting.

Ingredients
• 700 g Bísaro pork secreto
• 800 g small potatoes, unpeeled
• 4 cloves garlic
• Extra virgin olive oil
• Sea salt flakes and black pepper
• 2 roasted bell peppers, sliced, with a drizzle of vinegar (for serving)
• Chopped parsley
Preparation
1. Remove the secreto from the fridge 30 minutes before grilling. Cold meat contracts on the heat and loses its juices.
2. Boil the potatoes with their skins in well-salted water for 20 to 25 minutes. Drain, lightly smash each one, and drizzle with olive oil and chopped garlic. If preferred, put them in a hot oven for 10 minutes to crisp up.
3. Prepare strong embers, without flame. The grill should be very hot before the meat touches the grates.
4. Grill the secreto for 3 to 4 minutes per side, without piercing the meat. The fat will caramelize and brown. If it drips and causes flare-ups, move the meat away for a moment.
5. Let it rest on a cutting board for 5 minutes. Cut into strips, against the grain, and only then season with sea salt flakes and pepper.
6. Serve with the smashed potatoes, bell pepper salad, and chopped parsley on top.
Bísaro Tips
• Do not trim the fat. In secreto, the fat is the flavour: it melts on the grill and seasons the meat from within.
• Without embers, a very hot cast-iron skillet does a decent job. No olive oil needed: the Bísaro fat is enough.
• Salt goes on at the end. Salting beforehand draws out moisture and hinders crust formation.
